Using a non-soy based cooking spray, spray two baking sheets to prep. <br/><br/> Combine Mother’s Butter, Applesauce, Brown Sugar, Egg Replacer and Vanilla in a mixer, mix until sugar dissolves and the mixture is well blended. <br/><br/> Combine both Flours, Cocoa Powder, Baking Powder, Baking Soda, Xanthan Gum &amp; Salt in a second bowl. Mix with a small whisk - be careful not to whisk too vigorously, as the Tapioca and Rice Flours are both extremely fine and will coat your kitchen if you get too crazy whisking. Gradually, fold the blended dry mix into the wet mix, and blend together for just a couple minutes, until well blended. You don’t want to blend too much, as the Xanthan Gum will start getting too gummy. <br/><br/> Lightly coat your hands with cooking spray. Using either a melon baller or teaspoon (whichever you are most comfortable with), lightly coat with cooking spray and begin to pull out 1 1/2 inch balls of dough. roll and slightly flatten out until they are about 1/2 to 3/4 inches thick, and create a small indention in the center with your thumb. Lay out on cookie sheet in rows about 1 to 2 inches apart. If you want, take whole marshmallows and cut in half, then place marshmallows in the thumbprint indentions. <br/><br/> Bake for 10 minutes at 350 degrees.
